Smoked Chili Lime Chicken
This smoked chili lime chicken is a must for all the chili fans out there! With each bite, you’ll experience a harmonious balance of savory, spicy, and citrusy notes that will leave you craving more.
I think the magic to this smoked chili and lime chicken, is with the lime! The chili brings a subtle heat that dances on your palate, but the lime adds a refreshing and zesty twist that cuts through the richness of the meat. This results in a perfect symphony of flavors that will awaken your senses and transport you to a culinary paradise.
But be warned, this smoked whole chicken with chili and lime, has an awesome kick to it! It is not for the mild at heart.
Whether you’re hosting a backyard barbecue, a family gathering, or simply seeking to elevate your weeknight dinner, this smoked chili lime chicken is sure to be a showstopper. Its bold and vibrant profile is sure to impress your guests and make it a memorable meal.
So, fire up your smoker, embrace the tantalizing aromas, and get ready to indulge in a truly sensational culinary adventure with smoked chili lime chicken.

I’m a chili lover, through and through, so for me, this recipe has the perfect amount of heat. However, if you prefer a milder heat, then you may want to reduce the amount of chili you use or even try my smoked sweet chili chicken which is the perfect balance of heat and sweet.
To get the incredible infusion of lime, I like to use a chicken throne for this as per my smoked lemon chicken recipe as I find the lime flavor is slightly more balanced with the chicken throne. Plus it helps to create a mouthwatering, moist chicken.
If you don’t have a chicken throne, you can simply stuff the chicken cavity with lime, similar to my Smoked orange chicken, which will still deliver a delicious lime infusion.
So, if you’re eager to elevate your chicken cooking skills and savor the delightful flavor of Traeger chili lime chicken, let’s ignite the smoker and begin the process.
And if you’re looking for a similar recipe without the intense heat, you might want to try my smoked lemon pepper chicken recipe.

How Do I Prepare A Chili And Lime Chicken?
To start, I like to unpack the chicken over the sink to easily dispose of any excess liquid or packaging. Depending on the chicken’s source, you may need to eliminate the neck or giblets from the cavity, as they are unnecessary for this recipe and can be discarded.
Next, gently pat dry the entire chicken with a paper towel, as this aids in the adherence of the rub.
Once the chicken is dry and prepared, I like to coat the chicken in a layer of honey as it adds a burst of sweetness that compliments the chili and lime perfectly. It’s time to season it to your desired taste.
Ensure that every nook and cranny, as well as the cavity, is generously seasoned for optimal flavor.
For added lime and chili goodness, I fill my chicken throne with a mixture of lime, fresh chili, and water (though it is important to note that this step is not needed till you are ready to add the chicken to the smoker).
Alternatively, if you do not have a chicken throne, stuff the chicken cavity with quartered limes.
To allow the flavors to meld harmoniously, I recommend wrapping the seasoned chicken in a tray and refrigerating it overnight. This crucial step ensures deep flavor penetration, resulting in a truly mouthwatering final outcome.
What Rubs Or Seasoning Do You Use On Smoked Chili And Lime Chicken?
You can use any off-the shelf chili lime rubs, personally I like to use my own mix of chili lime chicken rub to cover the chicken generously and then add on some grated lime zest. This adds texture to the already incredible zesty flavor.
To make a chili lime dry rub, you will need a few simple ingredients. Here’s the recipe I use to create my own chili lime dry rub:
Ingredients:
- 2 tablespoons chili flakes
- 1 tablespoon paprika
- 1 tablespoon brown sugar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 2 teaspoon salt
- 1 teaspoon black pepper
- Zest of 1 lime
What Are The Best Pellets For Smoker Chili Lime Chicken
When it comes to smoking chicken, my go-to choice of pellets is apple. The reason I prefer apple pellets is because they infuse a delightful sweetness and fruity aroma that perfectly complements the chicken. The flavor they impart is well-balanced, never overpowering, allowing the natural taste of the chicken to shine through.
However, there are a few options that can enhance the overall flavor profile. Here are some pellet choices that pair well with the bold and tangy flavors of chili lime:
Fruitwood Pellets: Fruitwood pellets, such as apple or cherry, provide a subtle and sweet smoke flavor that complements the tanginess of the chili lime marinade. They add a hint of fruity aroma without overpowering the dish, allowing the chili lime flavors to shine through.
Mesquite Pellets: Mesquite pellets offer a stronger and more robust smoke flavor. This smokiness pairs well with the bold flavors of chili and lime, creating a robust and smoky profile. Use mesquite pellets if you prefer a more pronounced smoky taste in your chili lime chicken.
Pecan Pellets: Pecan pellets provide a rich and slightly nutty smoke flavor that pairs nicely with the tanginess of the lime and the spiciness of the chili. They add a distinct and earthy undertone to the chicken, enhancing the overall complexity of flavors.
Hickory Pellets: Hickory pellets offer a classic and robust smoke flavor that works well with a variety of meats, including chicken. The strong smokiness of hickory can complement the bold flavors of chili lime, adding depth and intensity to the dish.
Ultimately, the choice of pellets depends on your personal preference and desired level of smoke flavor. Consider experimenting with different pellet varieties to find the perfect combination that suits your taste buds and elevates your chili lime chicken to new heights of flavor.
Ingredients For Smoked Whole Chicken With Chili And Lime
- Whole Chicken (larger than 4.5lb)
- Whole Fresh Lime
- Chili flakes
- Paprika
- Garlic powder
- Onion powder
- Salt
- Black pepper
- Fresh Chili (optional)
- Honey (optional)

How To Make Traeger Whole Chicken With Chili And Lime
Prepare The Whole Chicken
Pat dry the chicken with a paper towel.
Pro Tip: Just lightly and patting it dry with a paper towel allows better friction for the dry rub to take hold.
Coat The Chicken In Honey (Optional)
After ensuring the chicken is dry and ready, I love to generously coat it with a layer of honey. This addition brings a delightful burst of sweetness that perfectly complements the flavors of chili and lime. The honey creates a harmonious balance, enhancing the overall taste sensation and taking the chili lime chicken to new heights of deliciousness.
Season The Whole Chicken
Apply a generous amount of the seasoning to the chicken, ensuring to massage it thoroughly into all the crevices and gaps between the wings and legs. Sprinkle the lime zest evenly over the chicken, ensuring it covers the entire surface of the chicken.
Pro Tip: Be sure to grate the outside of 1 lime with a fine grater to collect the zest. Sprinkle this zest over the chicken for a generous and tasty flavor.

Rest Your Chicken
Wrap the chicken in a suitable container, foil tin, or cling wrap, allowing it to rest.
Pro Tip: Give the chicken ample time to rest, preferably for at least an hour. Personally, I prefer to let it rest overnight, wrapped and refrigerated. However, if you’re using a chicken throne, allow the chicken to rest without the throne in place. Add the throne right before placing the chicken in the smoker.
Fill Your Chicken Throne
In this recipe, I prefer to utilize a chicken throne as it contributes to a juicier chicken.
I use a mixture of lime, chili, and water in the throne, which creates steam that infuses the chicken with moisture as it cooks. However, if you don’t have a chicken throne, don’t worry! You can still achieve fantastic flavor by filling the chicken cavity with lime wedges, delivering that wonderful zesty taste.
If you have a chicken throne, start by juicing the lime that you have already zested. Pour the lime juice into the cup of the chicken throne. Thinly slice your fresh chili and then add it to the throne. Then fill it with water until it’s fully topped up. For an extra punch of lime flavor, you can use skip adding the water and use pure lime juice instead. Once prepared, place the cap on the cup and position your chicken on the throne.
Pro Tip: Make the most of your chicken throne by utilizing its base to smoke additional vegetables. This not only enhances the visual presentation but also offers a delightful side dish.
If you’re not using a chicken throne, cut the limes into quarters or eighths. Begin with the lime that you have already zested. Stuff the chicken cavity with the lime quarters, ensuring a tight fit. Then, insert some of the lime eighths to further enhance the packing.

Pre-Heat Your Traeger Grill
When ready to cook preheat the grill to 200°F with super smoke on.
Tip: Ensure that the grills are placed such that there is plenty of room for the chicken, I like to remove the top shelf of my Ironwood850 to make it easier to access the chicken.
Place Your Chicken Into The Grill
Place the chicken directly on the grill.
Insert the smoker/BBQ thermometer probe into the breast of the chicken, trying to position the probe in the thickest section of breast.
Ensure the other end of your smoker/BBQ thermometer is connected to your Traeger (or thermometer and turned on).
Pro Tip: You can cook the chicken in an oven safe container to make transferring the chicken easier, but this will take away some of that smoky flavor.

Smoke
- Smoke your chicken for 60 mins/1 hour.
- After the 1 hour, increase the Traeger temperature to 350°F. Cook until the internal temperature reaches 140°F.
- Once the internal temperature reaches 140°F, increase your Traeger temperature to 450°F until the internal temperature reaches 160°F.
Pro Tip: Increasing the temperature for the last ~20 minutes will give the skin that lovely color and crispy texture.
Rest The Chicken
Once cooked remove the chicken from the grill and wrap in foil for an hour.
Carve
Once rested you can carve the chicken.

Prepare the chili lime marinade as usual and add some pineapple juice or diced pineapple chunks. The natural sweetness of pineapple complements the spiciness of the chili and the tanginess of the lime, resulting in a delightful flavor combination.

Add minced garlic or garlic powder to the chili lime marinade, creating a mouthwatering fusion of flavors. When serving BBQ chili lime chicken, it’s great to complement the bold and zesty flavors with a variety of side dishes. Here are some delicious options that pair well with BBQ chili lime chicken:

Mexican Street Corn Salad: Put a twist on the classic corn side dish by making a Mexican street corn salad. Combine grilled corn kernels with mayonnaise, lime juice, cotija cheese, chili powder, and chopped cilantro. The creamy, tangy, and slightly spicy flavors of this salad complement the chili lime chicken beautifully.

Cook white rice according to package instructions, then stir in chopped fresh cilantro, lime zest, and lime juice. This light and aromatic rice dish pairs perfectly with the bold flavors of chili lime chicken.
Grilled Vegetables: Fire up the grill and cook an assortment of seasonal vegetables. Zucchini, bell peppers, eggplant, and asparagus are great options. Toss the vegetables with olive oil, salt, and pepper, then grill until tender and slightly charred. The smoky flavors of grilled veggies complement the chili lime chicken nicely.
Avocado Salad: Create a refreshing and creamy avocado salad to balance the heat of the chili lime chicken. Combine diced avocado, cherry tomatoes, red onion, and chopped cilantro. Dress the salad with lime juice, olive oil, salt, and pepper. The creamy avocado and tangy lime flavors provide a cool contrast to the spicy chicken.
Black Bean Salad: Whip up a vibrant and protein-packed black bean salad. Mix cooked black beans, diced tomatoes, corn kernels, red onion, and chopped fresh parsley or cilantro. Dress the salad with a lime vinaigrette made from lime juice, olive oil, garlic, cumin, salt, and pepper. This salad adds a refreshing and nutritious element to your meal.
Don’t forget to offer some fresh lime wedges on the side for an extra squeeze of tangy flavor. These side dishes will complement your BBQ chili lime chicken, creating a well-rounded and satisfying meal.
